It looks like 2 different camera systems were used. For the Rita & Runaway Mine Train photos, it's clear that he's wearing the camera on top of his head. You can actually see it if you look closely at his shadow on the Runaway Mine Train photo.

For the Colossus & Swarm ones, the camera was placed in the front empty seat & it looks like there was some photo-stitching involved to give you a full 360* range in the vertical axis.. so perhaps 2 cameras were used to create those shots. It's kind of easy to see where the stitch is on the first Colossus photo, but the others are much smoother.

Wow, this really allows you to appreciate the ride view in a different light. Rita looks quite stunning from those angles.
