How long roughly does it take to erect a travelling coaster? I'm not on about the Big Apples, more like the Spinning Mouse coasters and the looping Schwartzys?
 
^ That seems a bit much, seeing that Olympia Looping is going to be taken down, moved, erected and tested again in 5 days starting this Monday...
 
I didn't expect it to me that much either. Whilst I have no clue at all, I didn't expect it to be more than a few days at most.

Someone on another forum has said that it takes about 3 days to fully construct a Reverchon Mouse.

Which only gives them 5 days to do the whole procedure of relocating the ride.
If you were to check the other dates then you will see that there are only around 10 days between several (half) of the fairs it visited this year, which would mean that the time frames you posted according to Coastersandmore, and their own web-page is a bit off in my view, it would also mean that they use more than the 10 people for the erection.

And seeing that Olympia Looping is the largest/most complex of the times for the other ones will undoubtedly be less for the smaller coasters. Höllenblitz (which is still a big coaster) for instance says it take them 12 days to relocate the ride. The smaller ones Wild-Mouse's etc. would probably be put up in a matter of days...

Could it not vary depending on the number of people working on it though? You could have the 7-day "average" construction time but it could be done in a shorter time, if that was needed due to dates of fairs etc., if more people were employed during the construction?
