I'm pretty sure those cars are available by going to the coaster menu and changing cars. I even made a diagram with arrows and stuff to help! How nice of me:
Oh but I would recommend just using the standard cars/trains, the themed ones are pretty tacky and hideous.

Enclosed coasters are only good if they completely immerse you into believing you're not inside a tin shed. That's probably one of the reasons why XNWO is so bad.
