Videotaping

Just mount it.
If you mean with a pocket camera then you shouldn't really be taking a camera on if the ride rules say you're not allowed. Although alot of people do it anyway.
I just find a way to use my arms to wedge against the sides of the seat or restraint to make a kinda make-shift tripod. That usually works quite well as it keeps it steady and straight and your arms absorb some of the bumps and shakes the coaster may make.
Make sure you use a wrist strap though and it's completely secure.

And more importantly, DONT BREAK THE PARK RULES. You're much better off asking them, especially for a more intense coaster. If they say no, then you obviously cannot do it, but if they say yes then you're absolutely fine to go ahead and do it.

i always use a wrist strap, usually the employees dont care if u bring a camera or not. i see videos on youtube of like MF and Medusa and stuff, starting in the station, is it usual that the park will let u film if you have a wrist strap and all?

^I'd say it was the opposite. Parks aren't likely to want the risk, so I'd imagine it was more usual for the park to refuse.

Ask East Coast(er) General about how he films his POVs, he's done loads for the site and hasn't gotten himself (or us) into any bother yet. To be honest, I don't see the attraction of POVs really. It's nice to have them for a site like this, but for a personal collection? I'm not so sure.

I tend to actually ask the park as they normally have a POV of coasters themselves. Legal and higher quality service. Well, its within the park CoC. Can't go wrong with that.

i find the public POV's to be more "action shots" which i hate. If its a POV it better be a POV not footage of people screaming and waving arms like idiots (im one of those "Polite Riders" except for standups)

you take a drill drill a hole silently so they don't hear in the station. take a bolt and a washer, put the bolt in the hole the washer on top the tighten the camera on the bolt.once the ride finishes take it apart quickly so they don't see you, then take bolt out and shove some mighty puddy in the hole so they don't see damage done to the ride.

I'm joking in every way

this time for real this is how i do it.

I turn on my camera right before i go and start recording. when i pick a seat i sit as far away from workers as possible then when ride starts I take out the camera and go. when the ride ends depending on the brake run i put it away early or mid run
