Which coasters are the best for making it seem like you're actually going to hit surrounding structure or objects? And during which part of the ride?

Notable ones off the top of my head:

Apollo's Chariot - Tunnel at bottom of 2nd drop.
Gemini - Both headchoppers at bottom of first and 5th drops.

Just my opinion though. Any others?

I always duck on PMBO when it cuts back under the lift hill by the south entrance to the park. It's not even close, I think it's just a combination of the speed, forces and part of the track.

Bizarro and Steel Force going into the tunnels. Dragon Challenge when they ran at the same time. The fire that shoots out at you on Mystery Mine.

Ninja at SFoG. I have touched the support near the brake run, and a few of thise supports are definitely not a safe distance away.

Steel Phantom/Revenge - That dive through Thunderbolt is fab.

Dragon Challenge had some decent foot choppers with the other train when it used duel. Now it probably doesn't have any (haven't ridden it since it actually dueled).

Alpengeist had many good foot choppers throughout the ride - Right before the immelmann, after the loop, before the wingover, and after the wingover.

And I would always lower my hands when I enter Millennium Force's tunnel, so that has a nice head chopper.

I hit a tree branch of the lift hill of Boulder Dash, that was pretty cool, beats hitting the branch on Bizzaro at Gadv.

Going under the structure on El Toro were great too, I always enjoyed those head choppers excluding the random choppers on the turn going over Rolling Thunder

But by far, the best head choppers were on The Looper at Fun Time Pier at Seaside NJ, where I actually hit the supports, I was ducking the whole time actually afraid I would going to lose my head.

I love the tunnel on Goliath at SFMM, especially from the back row, no matter what my arms go down.

Any coaster that has a big drop into a seemingly tiny tunnel is always a winner.

Bizarro at SFNE and Fantasia Special are the first ones that spring to mind.

Seriously? You guys actually hit supports? Hard to believe. Seems this would violate some sort of safety regulation. Unless you're going super slow while hitting them.

The covered finale helix on Beast. No **** way I can ever keep my hands up sitting on the inside of that turn.

Great Bear Hersheypark (random supports cutting out under the track, intertwining with Super Duper Looper)
Sheikra (first immelman) provides a great head chop, specifically back right.
Most B&M flyers (allowed to have shorter clearance and generally utilize it)
Space Mountain WDW

^^^^^^The support near the turn into the brake run I curled my arm around and held it the entire turn. There was another few spots that were FAR too close for comfort for me during the ride as well. I may need to rewatch a POV to remember the exact spots, but I know I could hit a support mid ride.

Speaking of nearly hitting something, Desperados tunnel.

Yeah, I have no photo proof, but it was a Pinfari looper if that speaks for the clearances. I touched the support while leaving the station, I was weary during the rest of the ride.

This always springs to mind whenever I think of headchoppers. It's not my favourite but it's the one I'm most familiar with.

Boardwalk Bullet is by far my favourite. The way it dive around itself and under the numerous supports is amazing. Apparently it crosses under and over itself 42 times. The whole coaster is a spaghetti mess of wooden track and supports. It's fab.

Watch this video and you'll see what I mean. After the first drop, you're never more than 3 seconds away from a headchopper. 01:35 is heavenly.
